The buttermilk gives the dough a light flakiness. I always use liquid dairy buttermilk because it is thicker and has more flavor than dried buttermilk powder. Reconstituted buttermilk powder is too thin, and the dough may require too much flour. Gently heat the dairy buttermilk in a small saucepan over low heat or in the microwave. It should be just above body temperature.

Maple syrup is one of Mother Nature’s great culinary gifts, but it has a mild flavor that is best savored over pancakes or waffles. Pancake syrup (really just flavored corn syrup) works best here. Not only does it give the buns more maple flavor, it also remains gooey when the buns cool, while true maple syrup hardens.
